- 120 gr tallarines de arroz
- 100 gr espinaca fresca
- 150 gr calabaza pelada
- 150 gr berenjena

- Lo primero que haremos será poner a remojo nuestra Soja texturizada y la dejaremos aparte para luego escurrirla

- Pelamos y quitamos las semillas de nuestra calabaza o si ya la tenemos lista... la cortaremos en trocitos pequeños
- Igualmente, cortaremos nuestros pimientos, cebolla y berenjena en trocitos, según nos guste más en tiras o en cuadraditos
- Pondremos en nuestra sartén con una cda de aove la calabaza y la berenjena

- Una vez la calabaza comience a coger color, añadir la cebolla y los pimientos. Añadir una pizca de sal
- Escurrimos muy bien la Soja y la añadimos a la sartén

- Añadiremos las especias. Os las pongo al gusto... pero aproximadamente yo puse una cdita pimentón, cúrcuma, comino y un toque de pimienta
- Removemos muy bien y dejamos sofreír durante unos 5 minutos
- Mientras, limpiamos las espinacas y las cortamos en trocitos

- Las añadimos a la sartén y sofreímos todo unos 3-4 minutos removiendo bien

- Añadir el tomate, bajar el fuego y cocinar unos 5 minutos. Rectificar de especias si hiciese falta
- Mientras tanto, herviremos agua y añadiremos el tallarín de arroz por 3 minutos, para luego escurrirlos bien.
- Y ya solo nos quedaría montar nuestro plato. Coloca la pasta y vierte encima el sofrito calentito.
- Yo puse debajo una cama de espinaca al natural. Al gusto !! 👌🏻
