Los cocemos hasta que estén tiernos, en olla rápida serán unos 10 minutos y en cocción tradicional entre 40 y 50 minutos si los garbanzos son tiernos, en el aceite de freír los ajos (añadimos más si hace falta)
- Preparamos un sofrito con la cebolla y tomate picados, cuando esté todo pochado ponemos el pimentón y el comino, y añadimos la calabaza troceada gruesa. Dejamos que se guise en su propio jugo hasta que esté tierna pero entera, salpimentamos.
Mientras tanto en una sartén ponemos los ajos enteros y la rebanada de pan. - Cuando todo esté dorado lo ponemos en el mortero o en el vaso de la batidora junto con el perejil y las almendras y lo trituramos bien hasta que se haga una pasta, una vez tiernos los garbanzos retiramos algo de agua si hace falta (la reservamos) y dejamos solo ligeramente cubiertos. Añadimos el sofrito de verduras y removemos. Damos un hervor y ponemos el majado.
- Probamos de sal y regulamos el nivel de líquido del guiso con el agua de cocción de los garbanzos que hemos reservado, después de unos minutos de cocción retiramos el guiso y dejamos reposar antes de servir unos quince minutos. Este guiso está más asentado si se prepara con tiempo, incluso de víspera.
