- Colocamos las berenjenas escurridas en la olla junto con el azúcar, la naranja cortada en cubos, el zapallo también en cubos, la esencia de vainilla y el jugo de limón.


- Dejamos en fuego medio y a medida que empiece a hervir le vamos retirando la espuma que se forma en la superficie.


- Vamos revolviendo con cuchara de madera de vez en cuando para que no se pegue y de paso vamos desarmando un poco las berenjenas y el zapallo. Las semillas empezarán a flotar en la superficie y si preferimos las podemos ir retirando con un colador pequeño.

- Cocinamos por una hora y mixeamos. Dejamos 15' más y envasamos. Yo lavo los frascos y los seco por 3' en microondas, las tapas tocadas con alcohol al 70% y dejo que se sequen boca abajo sobre papel de cocina. Envasar en caliente (frascos y mermelada) cerrar y colocarlos boca abajo hasta que se enfríén. Así quedarán cerrados al vacío y los podremos conservar todo el invierno.
